Apple with Creamy Avocado Dressing

INGREDIENTS

1/2 red cabbage, finely shredded
1 carrot, peeled and grated
1 celery stick, thinly sliced
2 apples, grated or thinly sliced
1/3 cup Creamy Avocado Dressing (see below)
large handful of coriander leaves
2 limes, cut into wedges

Creamy Avocado Dressing:

1 ripe avocado, peeled, stone removed and roughly chopped
1 tablespoon extra virgin olive oil or avocado oil
1 teaspoon finely grated lemon zest
1 garlic clove, roughly chopped
1 teaspoon salt, plus extra if needed
1 teaspoon dijon or yellow mustard
1/4 teaspoon freshly ground black pepper
juice of 1 large lemon, plus extra if needed
1 teaspoon honey

HOW TO MAKE IT

  1. Place the cabbage, carrot, celery and apple in a large bowl, add most of the dressing and toss to combine.

  2. Transfer the slaw to a serving bowl, drizzle with the remaining dressing and scatter the coriander leaves over the top. Serve with lime wedges for squeezing over.

  3. For the dressing: Place all the ingredients and 1/2 cup water in a blender or food processor and blitz until smooth and creamy. Add a little more water if you prefer a thinner dressing. Taste for lemon and salt, and adjust to your liking.
