Blackened Fish

Ingredients

1 1/2 teaspoons sweet paprika
1 tablespoon freshly ground black pepper
2 ¼ teaspoons dried thyme
2 ¼ teaspoons dried oregano
1teaspoon white pepper
1 ½ teaspoons garlic powder
1 ½ teaspoons salt
1 teaspoon ground cayenne
1 fillet skin on white fish fillets, such as snapper
1 tablespoon extra-virgin olive oil
Lemon wedges, for serving

Equipment:
Fire pit or charcoal grill
Campfire fish grill basket
Campfire compact frypan 28cm (f you’re following along and making the fried rice in the vid).

HOW TO MAKE IT

  1. Light the fire and let it burn down for about 1 hour.

  2. Prepare the fish: In a small bowl, whisk together the sweet paprika, black pepper, thyme, oregano, garlic powder, salt and cayenne add the extra virgin olive oil. Pat the fish fillets dry, then coat both side of the fish with to completely coat. Reserve remaining seasoning for your fired rice. Allow the fish to sit for 15 minutes at room temperature.

  3. Meanwhile, cook the fish: place the fish in the Camp fire fish cage and cook for 5-8 minutes per side. Or till it goes white and the skin gets crispy.
