INGREDIENTS

1 tablespoon extra-virgin olive oil
1 red capsicum (bell pepper), cut into strips
1 brown onion, thinly sliced
2 garlic cloves, finely chopped
1 teaspoon finely chopped red chilli
sprig of thyme, leaves picked 
400 g (14 oz) sourdough pizza dough (ask your local bakery for some of their starter if you don’t have any) or homemade pizza dough
4 slices of double cream brie
salt and freshly ground black pepper

Gas cooker
Cast-iron frying pan with a lid or a dutch oven

HOW TO MAKE IT

  1. Heat the olive oil in a cast-iron frying pan with a lid or a Dutch oven over low heat (please note it needs to be cast-iron; otherwise the pizza dough won’t cook properly). Add the capsicum, onion, garlic, chilli and thyme and cook, stirring occasionally, for 3 minutes or until the onion is translucent.

  2. Transfer the onion mixture to a bowl and wipe the pan or Dutch oven clean with paper towel. Set over high heat, cover with the lid and heat until it’s HOT!

  3. Using your hands, shape the dough into a circle that’s roughly the same size as your pan. Very carefully transfer the dough to the hot pan and scatter over the onion mixture. Top with the brie and season with salt and pepper, then cover with the hot lid, reduce the heat to low and cook for about 8 minutes. Remove the lid and carefully lift one side of the pizza to check that the base is lightly golden and the side is puffed up. The top should bounce back when lightly touched. 

  4. Allow the pizza to rest in the pan for 5 minutes, then carefully lift out, cut into slices and serve.
