Cheesy Beef Tallow Cornbread
Ingredients
1 whole ear fresh corn
1 jalapeño
120 g mozzarella
120 g cornmeal
120 g all-purpose flour
160 ml honey
7 g baking powder
2 g baking soda
2 g salt
240 ml beef tallow
240 ml buttermilk
2 whole eggs
60 ml honey

HOW TO MAKE IT
Preheat Traeger to 190°C, lid closed, for 15 minutes.
Peel back corn husks, remove silk, and close husks again.
In a bowl, mix cornmeal, flour, honey, baking powder, baking soda, and salt.
In a separate bowl, mix tallow, buttermilk, and eggs.
Combine wet and dry ingredients; fold until just combined (still lumpy). Pour into greased cast iron pan.
Cut corn kernels off the cob, sprinkle in the pan. Add mozzarella. Pour batter over top.
Bake 20–25 minutes until golden brown and tester comes out clean.
Cool 10 minutes before serving. Flip and serve warm. Enjoy!
