Ingredients

1 line-caught bream, cleaned and gutted
salt water chilli brine 
coal bread, to serve

Equipment:
Fire pit

HOW TO MAKE IT

  1. Light your fire and let it burn down for about an hour. You want coals to cook in.

  2. Place the fish directly on the coals and leave for about 20 minutes or until the flesh is cooked and the skin is crispy. Remove the skin, then place the fish in the salt water brine. Leave it for a few minutes and eat with coal bread.
