Cup of Choc Pudding

Ingredients

1 cup self-raising flour
1 cup caster sugar
1/2 cup cocoa powder, plus extra for dusting
60 g unsalted butter, melted and cooled
1/2 cup milk
1/2 teaspoon vanilla extract
1 egg
2 cups boiling water
vanilla ice cream, to serve

HOW TO MAKE IT

  1. Light your fire and let it burn down for about an hour until you obtain a medium heat.

  2. Sift the flour, half the sugar and half the cocoa powder into a bowl and stir to combine. Make a well in the centre.

  3. In a separate bowl, whisk the melted and cooled butter, milk, vanilla extract and egg until well combined. Gradually pour the mixture into the well, then fold the ingredients together to combine. Divide the batter evenly among the cups.

  4. Combine the remaining sugar and cocoa powder in a bowl, then sprinkle the mixture over the batter. Carefully pour the boiling water evenly over the tops of the puddings. Secure foil lids onto the cups, then place the cups on the grill grate over the coals. Using some long-handled tongs, place a few coals on top of the foil lids.

  5. Bake for 15 minutes or until the tops of the puddings are firm. Stand for 10 minutes to cool slightly, then dust with extra cocoa powder and serve immediately with vanilla ice cream.
