Whole Baked Peaches


When summer peaches are at their peak, this is how I like to serve them — whole and baked on the Traeger with a splash of vanilla and a touch of brown sugar. The smoke brings out their sweetness, and they turn soft and jammy. I recommend topping them with crème fraîche or a scoop of ice cream for a proper treat.



Ingredients

6 peaches, halved
100 g sugar
1 teaspoon cinnamon
50 g shredded coconut
60 g flour
60 g cold grated butter
240 ml cream

Traeger grill



HOW TO MAKE IT

  1. Preheat the Traeger to 180°C.

  2. In a bowl, mix all dry ingredients together.

  3. Place halved peaches in a heat-proof baking dish, sprinkle with the dry mix, and top with butter.

  4. Cook for 30 minutes or until soft and squishy.

  5. Serve with cream.
