EVOO Nectarines with Coconut Sugar

Ingredients

8 nectarines, halved, stones removed
(you can also use other stone fruit, such as peaches or plums) 
2 tablespoons extra virgin olive oil (I love Red Island EVOO)
1/3 cup coconut sugar 
Vanilla ice cream or yogurt

HOW TO MAKE IT

  1. Light your portable gas stove, but charcoal or even an open fire would also be great also.

  2. Place a medium frying pan on the gas cooker and allow it to heat up.

  3. Add the nectarines, drizzle in the olive oil and sprinkle the coconut sugar over the top.

  4. Cook for about 4 minutes, or until the nectarines are soft and slight stewed. 

  5. Serve the nectarines hot with a big dollop of vanilla ice cream or yogurt.
