Fire Cheeses with Honeycomb & Blistered Grapes
I love this one for breaking the ice with a group of friends or family. There’s something about this starter that gets people chatting and connecting. It’s an interactive kind of dish — everyone leans in with crusty grilled bread, scooping up soft cheese, honeycomb, and fire-kissed grapes. Sweet, savoury, a little messy — just the way I like it.

Ingredients
250g round of brie or camembert cheese
150g blue cheese wedge
150g monchago cheese
Grilled bread or baguette
Red grapes
Honeycomb
Equipment:
Fire pit, cast iron pan

HOW TO MAKE IT
Light your fire 30 minutes before you are ready to cook, and let it burn down until you obtain a low heat.
Place a cast iron chargrill pan on the fire so it gets nice and hot (you can also use a cast iron frying pan).
Add the grapes and blister till they carmelize and char a little. Set aside, and reheat the pan.
Add the cheeses and cook until golden and starting to melt. Flip the cheese just once – don’t turn the soft cheese over as it will fall apart.
Once the cheeses are hot and melty, serve with grilled bread, honeycomb, and the blistered grapes.
