INGREDIENTS

2 cloves garlic, finely chopped
2 thyme sprigs, leaves stripped
1 tablespoon chopped dill salt
2 tablespoons melted ghee
2 fish fillets, skin on, pin-boned (I used flathead)

Shovel

HOW TO MAKE IT

  1. Light your fire and let it burn down for about an hour until you obtain a medium heat.

  2. Combine the garlic, thyme, dill, a pinch of salt and 1 tablespoon ghee in a bowl. Add the fish and turn to coat in the mixture.

  3. Place a shovel on the fire to heat up (this is going to be your frying pan!).

  4. Place the marinated fish on the shovel and fry for 4 minutes. Turn and add the rest of the ghee, then cook for another 4 minutes. Eat straight off the shovel.
