VEGETARIAN RECIPE
Hung Apple Sauce
Ingredients
10 apples, mixed varieties
3 cups orange wine or a sharp white wine
1/2 cup sugar
Cinnamon sticks
Equipment:
Firepit, tripod
HOW TO MAKE IT
Light your fire and let it burn down for about 1 hour, or until you obtain a medium heat.
Build a tripod above the coals.
String your apples with some wire and hang over the fire. You want them to be about a meter (3 ft) above the coals.
Smoke the apples for 4 hours.
Once smoked, chop the apples into bite-size pieces.
Divide chopped apples in half. Put half the apples in a pot with the sugar, wine, and cinnamon, and cook in the coals of the fire (or on a stovetop over low heat) for 30 mins, until the apples soften and turn into apple sauce. Stir occasionally, adding water as needed.
Once cooked, add the other half of the chopped apples. This way it has some texture to it.
Serve with your favourite meat, and or for dessert with whipped cream.
