Molasses Golden Syrup Dumplings

Ingredients

1 cup self raising flour
salt to taste
20g unsalted butter
1 egg
50ml milk
runny cream to serve

For the sauce:
1/2 cup golden syrup
1/4 cup molasses
3/4 cup brown sugar firmly packed
30g unsalted butter
1 2/3 cup water

HOW TO MAKE IT

  1. Light your fire and let the coals burn down to a slight flame, best to get your fire going about an hour before you’re ready to cook.

  2. Sift the self raising flour into a bowl and add a pinch of salt.

  3. Rub the butter into the flour until it resembles breadcrumbs then add the whisked egg and stir to

    combine.

  4. Gently add the milk and mix till the dough just comes together and resembles a scone mix (do

    not over work the dough). Set aside.

  5. Combine all sauce ingredients into a 3.2 Quart Combo Cooker . Bring to the boil to combine before reducing heat to a gentle simmer.

  6. Flour your hands and roll the dough into the size of a twenty cent piece. Place the balls onto a baking paper lined tray.

  7. Slip the balls off the baking paper and into the syrup. Place the lid onto the Combo cooker, place onto the Camp Grill & Hot Plate, add some coal on top of the cooker so the heat is placed evenly. Let cook for around 10 mins before removing from the fire, the dumplings should be light and fluffy.

  8. Remove with a slotted spoon and serve with the remaining sauce and a jug of runny cream.

  9. Yummo!
