Salt Water Chilli Brine

Ingredients

2 tablespoons extra virgin olive oil
4 long red chillies, chopped (leave the seeds in if you like a bit of spice) 
handful of cherry tomatoes 

Equipment:
Fire pit

- Makes 1 cup -

HOW TO MAKE IT

  1. Light your fire and let it burn down for about an hour. 

  2. Place a frying pan on the fire, add the oil and chilli and cook for 10 minutes so the flavour infuses into the oil. Add the tomatoes and cook until blistered.

  3. Take the pan off the heat and squash the tomatoes into the oil with a stick. While still hot, pour in 1 cup of ocean water. Serve with the coal fish.
