Smoked Cabbage with Beef Tallow
Ingredients
1 cabbage
1 cup beef tallow
Salt
Curry powder (optional)
Equipment:
Fire pit, tripod
HOW TO MAKE IT
Light your fire and let it burn down for about 1 hour, or until you obtain a medium heat. Build a tripod above the coals.
Hang your cabbage like a present and, smoke over the fire for 4 hours (or for however long you’re cooking your meat).
Once smoked, shred finely.
Heat a cast iron skillet up to smoking hot.
Add some beef tallow, and then place a thin layer of the cabbage in the pan.
Cook until crispy, and season with salt.
Repeat as needed until all the cabbage is crispy.
Serve with your favourite meat dish. (I love putting a little curry powder in here also.)
