VEGETARIAN RECIPE
Smoked Potato Salad
Ingredients
2 lbs (1 kg) baby or Yukon Gold potatoes, halved
Dressing:
1 cup crème fraîche
1 teaspoon Dijon mustard
1 tablespoon lemon juice or white wine vinegar
½ teaspoon smoked paprika
½ small red onion, finely diced
¼ cup fresh chives or dill
1 teaspoon liquid smoke
Equipment:
Gozney Dome or Rocbox, or Weber Kettle

HOW TO MAKE IT
Place potatoes in cold salted water. Bring to a boil and simmer for 12–15 minutes until tender but firm. Drain and let steam dry for 2 minutes.
Once cooked, add potatoes to the grill to smoke with the tomahawk, or for a cheat, add liquid smoke to the dressing.
In a large bowl, whisk together crème fraîche, mustard, lemon juice, smoked paprika, salt, and pepper.
Add warm potatoes to the dressing. Fold in red onion and fresh herbs.
Serve warm, or chill for 2 hours to let flavours meld.
