Sun Ranch Brunch in Byron Bay
Sun Ranch holds a special place in my heart. Byron has always felt like a second home — the community, the people, some of my closest friends live there. So when the opportunity came up to collaborate with Sun Ranch, I jumped at it. We released tickets, and the event sold out in under a week. The day before, a torrential thunderstorm forced us to postpone, so we shifted it to a Sunday brunch instead. Even with the weather setback, it ended up being such a beautiful experience. Some people unfortunately missed out, but I’m so excited to welcome them next year.
You always have to do a little dance around events, since things change. In my eight years of cooking, I’ve never had to postpone something before. But this one? It still turned out to be a big success. As the smoke settled and the sun dipped behind the hills, the honky-tonk band played into the evening. It was truly unforgettable. The highlight for me was the Bangalow pork, slow-cooked for six hours and served with my orange wine and smoky apple sauce. So simple, so good.
