Surfers BLT


Surfing first thing can work up a bit of an appetite and nothing quite hits the spot like a generous BLT. Chow down one of these, wait 30 mins and then you’re good to get back out there on your board. Check out my video surfing with the boys here.

Ingredients

12 rashers of bacon (smoked flavour is my fav for this recipe)
6 eggs
6 burger buns sliced in half (or try brioche if your partial to a buttery finish)
3 brown onions
12 butter lettuce leaves
6 slices of tomato (or more depending on taste)
6 slices of tasty cheese
Mayonnaise
Hot sauce
BBQ sauce

HOW TO MAKE IT

  1. Heat your barbecue until it’s hot, then place a frypan on the grill and sweat the onions in some olive oil until they’re soft and transparent in colour.

  2. Mix a few tablespoons of barbecue sauce to your onions and remove from the heat and set aside.

  3. Place the bacon strips directly on the grill and cook to your liking before setting aside (I like mine pretty crisp).

  4. Using another frypan on the barbecue, drizzle some olive oil and butter and then crack the eggs. Cook to your liking; for sunny side up about 3-4 mins should do, they’ll continue to cook in the pan once you remove from the heat.

  5. Now you’re ready to make your BLT, spread some mayo on your buns and grill them on both sides till their brown then layer it up baby! If it’s avo season add some of those in too for a creamy texture. Nom nom nom… best post surf.
