Miso Fish on the Grill with Ghee and Sesame Sauce

Ingredients

1 cup ghee, melted
1/2 cup white miso paste
3 whole john dory or other white-fleshed fish (about 700 g each), gutted, skin on and scales removed
extra virgin olive oil, for brushing
salt and freshly ground black pepper
handful of coriander leaves
lemon wedges, to serve

Sesame sauce:
1/3 cup sesame oil
1 tablespoon soy sauce
1 teaspoon finely chopped or grated ginger 1 long red chilli, finely chopped
2 spring onions, sliced into rings

HOW TO MAKE IT

  1. Combine the melted ghee and miso paste in a small bowl, then rub all over the fish, both inside and out. Cover and rest in the fridge for at least 1 hour.

  2. To make the sesame sauce, whisk together the sesame oil, soy sauce and ginger in a bowl. Stir in the chilli and spring onion and set aside.

  3. Heat your barbecue on a high heat, then drop it down to a medium heat. Brush the grill with oil. Add the fish and cook for 10 minutes on each side or until cooked through. Season with salt and pepper.

  4. Scatter coriander leaves over the fish and serve with the sesame sauce and lemon wedges for squeezing over.
